What we’re eating: Easy lentil salad

I love finding quick and healthy foods my toddler likes as much as I do.

This is my recent favorite: Trader Joes Lentil-bruschetta salad. You mix one packet of pre-cooked lentils and one container of TJ’s bruschetta sauce (+/- avocado or cucumber or mango or whatever else is in your kitchen) and you’re done!


I make it at least once a week and use it for my toddler’s lunch as well as our dinners… so good.

Hi Anar – nice to hear from you! Curious to hear where you are these days?

Thanks for the thought and link — I follow Dave Asprey’s work and am familiar with some of his thoughts on lentils and lectins, but I also think people have to experiment to figure out what works for them. My body feels good when I eat lentils and I plan to continue them for now. Our family follows a plant-based diet and we are working on trying to find good sources of protein, especially for our growing kids!
